Low Carb Poutine

The first 2 weeks of February mark La Poutine Week, which is a pretty big deal when you live in Quebec! Fries with cheese curds covered in gravy is kind of our thing here. 😂

Luckily, I have been testing and tweaking my low carb poutine for a few years now, so I don’t have to miss out. Plus, there are so many fun variants of it, all of which I have genuinely preferred to classic (full carb) poutines.

Ingredients

6 cups turnip fries
1 cup cheese curds
1 Tbsp extra virgin olive oil
1/2 tsp paprika
Salt and pepper, to taste

Poutine sauce
1 ½ cups beef broth
1/4 cup butter
2 celery stalks, finely diced
1 garlic clove, minced
2 Tbsp almond flour
1/2 tsp xanthan gum
Salt and pepper, to taste

Cook time: 30 min

Directions

In a large bowl, drizzle the turnip fries with olive oil. Season with paprika and to taste, with salt and pepper, and toss well.

Transfer the turnip fries to air fryer and cook at 375F for 25-30 min.

Alternatively, preheat oven to 375F and bake for 25-30 min, tossing halfway through.

While the turnip fries cook, prepare the gravy.

In a small saucepan, melt the butter over medium-high heat.

Add the celery and garlic, sautee 2-3 min.

Add the almond flour and brown slightly, mixing constantly, about 2-3 min.

Add the beef broth and bring to a boil.

Reduce heat to medium and allow to simmer, 10-12 min, letting the sauce reduce.

Remove from heat, add xanthan gum and pulse until smooth using an immersion blender. You can also transfer to a blender to pulse.

Taste the sauce, then adjust salt and pepper, to taste. You can also simmer and reduce further, if you prefer a thicker sauce.

Once turnip fries are ready, toss with the cheese curds in a small baking dish, then drizzle with the poutine sauce.

Place the baking dish into the oven on broil for 3-5 min, to melt the cheese curds slightly.

Serve and enjoy!

NOTE: You can substitute or combine the turnip fries with any other low carb alternative, such as celeriac fries, green beans, asparagus, etc. The nutritional information and net carbs may varry with substitutes and mixes.
