Coconut Konjac Rice

This coconut konjac rice is one of my top go-to recipes when I need a quick and easy side. It fries up in no time and makes the perfect sidedish for coconut-based curries or any other main with some kick!

Ingredients

1 pkg konjac rice (250g)
1/4 cup full-fat coconut milk
1 Tbsp coconut oil
Pinch of kosher salt

Directions

Open the package of konjac rice, transfer it to a sieve and rinse it thoroughly, at least 1 min.

In a frying pan, melt the coconut oil over high heat.

Add the konjac rice and a pinch of kosher salt, and sautee until liquids are gone, stirring frequently about 3-4 min. You will notice that the liquids have evaporated when the konjac rice starts making popping sounds.

Add the coconut milk, stir well, and again sautee until liquids are gone, storring frequently another 3-4 min.

Serve the konjac with the main dish of your choice. It pairs wonderfully with Thai, Indian, Caribbean, as well as any curry or coconut-flavoured food.
