Indian Riced Cabbage

When we order Indian food from one of our favourite local restaurants, I quickly prepare a side of this Indian riced cabbage! A fantastic sidedish, it is also a nice change from cauliflower and is ready in minutes to soak up all those delicious curries. 🤩

Ingredients

4 cups green cabbage, grated
1/4 cup onion, grated
2 Tbsp butter
1 tsp turmeric powder
Salt and pepper, to taste

Directions

Start by grating and measuring out the green cabbage and onion, then toss them together in a medium bowl. You can also shred them in a food processor, but I love the fine texture I get from grating them by hand.

In a large pan or skillet, melt the butter over medium-high heat.

Add the cabbage and onion mixture, toss in the melted butter and sautee 3-4 min, stirring occasionally.

Sprinkle with the turmeric, and season to taste with salt and pepper, allowing to sautee another 5-8 min, until the cabbage is soft and slightly translucent.

Remove from heat and serve with the main of your choice.
