Cauliflower Fried Rice (Keto)
A quick and easy fried cauliflower rice is my go-to sidedish for most Asian-inspired meals. There is no reason (or excuse 😂) for bland cauliflower rice!
Ingredients
2 cups cauliflower rice
1 Tbsp coconut oil
2 tsp sesame oil
2 tsp soy sauce
2 tsp sriracha
Salt and pepper, to taste

Directions
In a large pan or skillet, melt the coconut oil over medium-high heat.
Add the cauliflower rice and remaining ingredients and mix well.
Fry 5-6 min, stirring frequently, until the cauliflower rice is slightly golden.
Serve with your choice of main. This fried cauliflower rice pairs perfectly with pork belly (see our Shanghai-Style Pork Belly recipe) or Chinese dry-rubbed salmon.
