Roasted Pork (Keto)
This pork roast is super easy to make! Just 2 min of prep, then pop it in the oven, forget about it and voilà!
Ingredients
1 ½ kg pork roast
2 cups chicken broth
1 tsp caraway seeds
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper

Directions
Pull the roast out the fridge about 30 min before baking it.
Preheat oven to 300F.
Rub the pork roast with the seasoning, then transfer it to a deep baking dish.
Pour the chicken broth into the bottom of the dish, then bake 90 min.
Transfer the roasted pork to a cutting board and allow it to rest 15 min before slicing.
Serve with your choice of sides. I always refrigerate or freeze a few slices to make Cuban sandwiches (see our Keto Cubano recipe).
