Cauliflower Gratin (Keto)
This cauliflower gratin is quick and easy to whip up, making it a perfect sidedish to any meal.

Ingredients
1 head of cauliflower, cut into florets
4 prosciutto slices
1/4 cup cheddar, grated
1/4 cup mozzarella, grated
1 Tbsp extra virgin olive oil
1 tsp Hungarian paprika
1 tsp salt
1/2 tsp pepper

Directions
Preheat oven to 375F.
In a baking dish or loaf pan, toss the cauliflower florets with the olive oil and seasoning, then top with the grated cheeses.
On a small baking sheet, curl the prosciutto slices into round bundles.
Bake both the cauliflower and the prosciutto for 30-35 min.
Remove the prosciutto from the oven.
Switch the oven to broil and leave the cauliflower gratin for 1-2 min, keeping an eye that the top turns golden, but does not burn.
Serve the cauliflower, topped with a crumbled prosciutto chip.
