Easy Chicken Tikka Masala (Keto)

My son took one bite, his eyes bulged and he exclaimed, “It tastes just like Spice Bros!”

Well, I knew we had a winner and that we would all eat well, since that is one of our go-to takeout restaurants.

This chicken tikka masala is so easy to make, it can be a regular weeknight meal!

Ingredients

6 chicken breasts, diced (approx. 1 kg)
2 cups canned diced tomatoes
1/2 cup water
1/4 cup 35% cream
1/2 small white onion, diced
1 Tbsp avocado oil
1 Tbsp fresh ginger, minced
2 garlic cloves, minced
2 tsp garam masala
2 tsp chili powder
2 tsp ground turmeric
Salt and pepper, to taste
Optional, for garnish: fresh cilantro and/or parsley

Directions

In a skillet, heat the avocado oil over medium-high heat.

Add the chicken and season it with salt and pepper, to taste. Brown the chicken, stirring occasionally, for about 8 min.

Add the onion, ginger, garlic and spices to the skillet, and sautee for about 2 min.

Pour in the water and diced tomatoes. Bring to boil, then reduce to medium heat and allow to simmer 10 min.

Add the cream and allow to simmer another 5 min. Taste to adjust seasoning, as needed.

Serve the tikka masala with cauliflower or konjac rice. Optionally, garnish with fresh cilantro and/or parsley.
