Spanish Cauliflower Rice (Keto)

Cauliflower rice does not have to be a bland sidedish! Whatever I am enjoying it with, I fry it up, add flavour and never find myself missing actual rice.

This Spanish cauliflower rice pairs perfectly with grilled meats, BBQ and anything with bold flavours.

Ingredients

4 cups cauliflower rice
1 cup green bell pepper, diced
1/4 cup white onion, diced
1/4 cup canned diced tomato
1 Tbsp avocado oil
Salt, to taste

Directions

In a large skillet, heat avocado oil over medium-high heat.

Add the onion and sautee until slightly softened, about 3 min.

Stir in the bell pepper and sautee another 3 min.

Add the cauliflower rice, diced tomato, and salt to taste. Sautee another 5-8 min, until the cauliflower starts to get a bit golden.

Serve with your choice of main. This Spanish cauliflower rice pairs wonderfully with grilled and smoky flavours.
