Keto Peanut Butter Fudge
So I just started watching the second season of The Mandalorian, so this peanut butter fudge was the perfect excuse to use my beloved Star Wars silicone molds. Of course, any mold or dish will do, but the fudge may not be as fun!
Ingredients
1/2 cup golden monkfruit sweetener
1/4 cup butter
2 Tbsp 35% cream
1 Tbsp all natural peanut butter
1/2 tsp vanilla extract
Yields: 8 servings

Directions
In a small saucepan, melt the butter over medium heat.
Add the monkfruit, peanut butter and vanilla extract, and bring to boil, stirring constantly.
Remove from heat and stir in the 35% cream.
Divide between silicone molds or pour into a parchment lined dish.
Refridgerate at least 2 hours to allow the fudge to set. If using a parchment lined dish, use a sharp knife to cut the peanut butter fudge into bite-sized portions.
