Mashed Roasted Cauliflower (Keto)

Hands down my absolute favourite alternative to mashed potatoes! 🙌

Preparing this side from roasted cauliflower makes all the difference, and I honestly prefer this option to actual mashed potatoes. No guilt, no regrets!

Ingredients

1 large cauliflower
1 oz cream cheese
1 Tbsp heavy (35%) cream
1 Tbsp extra virgin olive oil
1 Tbsp butter
Salt and pepper, to taste

Directions

Preheat oven to 350F.

Wash the cauliflower and cut it into florets, then lay them out on a baking sheet.

Drizzle with the olive oil and season with salt and pepper, to taste.

Toss well and bake 25-30 min, flipping halfway, until golden.

Transfer the roasted cauliflower to a food processor or a deep bowl, if using an immersion blender.

Add the cream cheese, heavy cream and butter, then pulse a few seconds, until desired texture obtained.

Serve with the main of your choice. This roasted and mashed cauliflower pairs with anything, but is especially divine with some slow-roasted beef (see our Easy Keto Roast Beef recipe) or nice charred steak.

Optionally, you can also top this roasted mashed cauliflower with some chives, crispy bacon, fresh parsley or any other garnish of choice. Not that it needs it!
