Easy Keto Roast Beef
This roast smelled soooo amazing while it was in the oven that it was distracting me from work! 🤤
So easy to prepare, this beef just melts in your mouth.
Ingredients
1 kg (2 lb) beef roast
1 cup beef broth
2 Tbsp butter
2 tsp caraway seeds
2 tsp onion powder
2 tsp kosher salt
1 tsp garlic powder
1 tsp paprika

Directions
Bring to roast to room temperature, pulling it out of the fridge 40 minutes before cooking.
Preheat oven to 300F.
Rub the roast with the kosher salt.
In the large pan, melt the butter over medium high heat. Once the pan is hot, pan sear the beef on all sides.
Transfer the beef to a roasting pan. Top it with the caraway seeds, onion powder, garlic powder and paprika, then pour the beef broth into the bottom of the pan.
Cover and bake for 3 hours, or until tender.
Remove the roast from the oven, and allow it to rest 20 min before slicing.
Serve with your choice of sides and drizzle with a little of the broth from the roasting pan.

Also, this recipe works for any beef roast cut. A firmer roast will yield clean slices, and a roast with more marbling will break apart more.
