Cardamom Mug Cake
Fall is always an incredibly busy time of year for our family, so quick and easy recipes help keep me on track! That makes mug cakes one of my top go-toโs for dessert.
Plus, I'm a total sucker for spices, making this cardamom mug cake irresistible! ๐
Ingredients
1 large egg
3 Tbsp unsweetened macadamia (or almond) milk
1 Tbsp almond flour
1 Tbsp coconut flour
1 Tbsp golden monkfruit sweetener
2 tsp ground cardamom
1/2 tsp baking powder
1/2 tsp vanilla extract

Directions
In a mug or ramekin, combine the almond and coconut flours, monkfruit sweetener, cardamom and baking powder.
Add the egg, macadamia (or almond) milk and vanilla extract, and mix well.
Microwave 5 to 6 times at 30 second increments until cooked through.
Enjoy the cardamom mug cake as-is or topped with some chopped nuts or a keto glaze.
