Broccoli and Cheese Frittata (Keto)
This broccoli and cheese frittata will have you lovin’ your greens! It is quick to whip up, then you just pop it into the oven and wait to enjoy with a side of fresh salad or jimaca fries.
Ingredients
8 large eggs
1 head of broccoli, cut into florets
1/2 cup mozzarella, grated
1/2 cup cheddar, grated
1 tsp dry basil
1 tsp coconut oil
Salt and pepper, to taste

Directions
Preheat oven to 375F.
In a large bowl, whisk together the eggs, cheeses and seasoning.
In a large oven-safe skillet, heat the coconut oil over medium-high heat. Add the broccoli and sautee for 2-3 min.
Pour the egg mixture over the broccoli, give it a good stir, then transfer the skillet to the oven and bake 35-40 min, until the top is golden.
Serve with your choice of side, such as a fresh salad, some jicama fries, etc.
