Avocado Pesto Zoodles (Keto)

It’s Earth Day! Celebrating it with fresh, raw and delicious ingredients. This avocado pesto takes moments to prepare and requires zero cooking.

In our home, this recipe is called “Ninja Turtle Pasta”, because of its green colour and that the name made it a quick favourite with our son when he was little and VERY picky.

Ingredients

6 cups zoodles
2 avocados
1/2 cup fresh basil
2 Tbsp extra virgin olive oil
2 Tbsp pine nuts
1 garlic clove
Salt and pepper, to taste
Optional, for garnish: red chili flakes, mascarpone

Directions

In a blender, puree the avocados, fresh basil, olive oil, pine nuts and garlic. Season with salt and pepper, to taste.

Serve the avocado pesto over zoodles. Optionally, garnish with some red chili flakes.

When I have some mascarpone in the fridge, I also like to add a dollop of it. Leave out the cheese for a fully vegan recipe!

I love this recipe with raw zoodles, but if you prefer them cooked, you can quickly sautee them in a pan over medium-high heat with a little olive oil, salt and pepper.
