Keto Chipotle Cheddar Crackers
There are moments when you just NEED a salty, crunchy snack! Be it for movie night or a little pick-me-upper between meals, these chipotle cheddar crackers have you covered.
Ingredients
1 cup almond flour
1 cup mozzarella, grated
1 large egg
1/4 cup hemp seeds
1/4 cup chia seeds
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp chipotle chili powder
1/2 tsp pepper
1/2 tsp salt
1/2 tsp xantham gum

Directions
Preheat oven to 350F.
In a medium bowl, mix together the almond flour, seeds, seasoning and xantham gum.
In a large microwave-safe bowl, microwave the mozzarella cheese 1 min, until melted.
Give the melted cheese a stir, then mix in the dry ingredients and egg.
Work into a well-combined dough, then transfer to a parchment sheet. Cover it with another sheet of parchment, then roll the dough out flat.
Carefully remove the top sheet of parchment, then cut the dough into crackers using a knife or pizza cutter.
Transfer the dough with the parchment onto a baking sheet, and bake 10 min. Remove the crackers from the oven, flip them over and return to the oven for another 5 min.
Remove from the oven and allow to cool 15 min.
Enjoy the chipote cheddar crackers as-is, with dip or with a dab of cream or goat cheese.
