Supergreen Keto Soup
This soup is an easy way to get your dose of superfoods and greens! 🥬
Packed with kale and spinach, a warm bowl of this supergreen keto soup will bring you as much comfort as health benefits.
Ingredients
4 cups kale, chopped
3 cups chicken bone broth
3 cups water
2 cups spinach, chopped
1 scallion, chopped
2 garlic cloves, minced
2 Tbsp avocado oil
2 Tbsp heavy (35%) cream
1 Tbsp lemon juice
2 tsp paprika
1 tsp onion powder
Salt and pepper, to taste

Directions
In a large pot over medium-high heat, warm the avocado oil.
Add the scallion and garlic, and sautee 2 min, stirring often.
Add the kale and spinach, and allow the greens to cook down 3-5 min, stirring them frequently.
Top off with the chicken bone broth and water.
Stir in the paprika, onion powder, and season with salt and pepper, and bring to a boil.
Cover, reduce the heat to medium, and allow to simmer for 30 min, stirring occasionally.
Uncover and blend the soup using either an immersion blender or by transfering it to a blender.
Add the lemon juice, then taste the soup and adjust the season, as needed.
Return the soup to the stovetop, bring the heat back up to high and let the soup simmer another 10 min.
Remove from the heat and stir in the heavy cream.
Enjoy a bowl of supergreen keto soup as-is or enjoy with a side of choice. This soup pairs wonderfully with stone age bread (see our Keto Nordic Stone Age Bread recipe).
Optionally, you can also sprinkle it with a little grated parmesan. 👌
