Keto Cauliflower Tots
These quick and easy cauliflower tots make an amazing side to any meal. They can even stand in for hashbrowns when serving brunch!
Ingredients
2 cups cauliflower rice
1/2 cup grated cheddar cheese
1 scallion, sliced
2 large eggs
1 tsp salt
1/2 tsp pepper

Directions
Preheat oven to 375F.
Combine all the ingredients for the cauliflower tots in a large bowl.
Grab a handful of the mixture and squeeze out the liquids. Then shape into a small patty and space out on a parchment lined baking sheet. This recipe yields 12 cauliflower tots.
Bake the tots 25-30 min, flipping them halfway through.
