Keto Birthday Cake Blondies

What makes birthday cake flavoured treats so popular? I think it’s the combination of fun colours 🦄, childhood nostalgia and that sweetness!

These birthday cake blondies have it all, and are still keto / low carb!

Ingredients

1 cup almond flour
1/2 cup coconut flour
1/2 cup sugar-free funfetti or sprinkles (see our Sugar-free Sprinkle recipe and use various colours), setting aside about 2 Tbsp
3/4 cup unsweetened almond milk
1/3 cup monkfruit sweetener
1/4 cup butter, melted
1/4 cup sugar-free white chocolate
2 large eggs
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp xantham gum

Directions

Preheat oven to 350F.

In a medium bowl, combine the almond flour, coconut flour, sugar-free funfetti (except 2 Tbsp set aside), monkfruit, baking powder and xantham gum. Set aside.

In a large bowl, whisking together the almond milk, eggs and vanilla extract. Slowly add the dry ingredients.

Fold in the melted butter and sugar-free white chocolate and mix until well combined.

Transfer the blondie batter to a silicone or greased baking pan, and even out the top.

Sprinkle with the remaining 2 Tbsp of sugar-free funfetti , then bake for 20-25 min.

Remove the blondies from the oven and allow them to cool at least 15 min before cutting them into 12 bars.

Store the birthday cake blondies in the fridge or freeze them.
