Keto Peanut Butter Crunch Cereal

What is there not to love about peanut butter?! (Apologies to folks with peanut allergies.)

This peanut butter crunch cereal is truly addictive! πŸ₯œ Made with nuts and seeds for an irresistible crunch, it oozes with that delicious peanut butter flavour.

Ingredients

3/4 cup unsweetened shredded coconut
1/2 cup macadamia nuts
1/2 cup pumpkin seeds
1/4 cup peanuts
1/4 cup sunflower seeds
2 Tbsp Swerve brown
2 Tbsp sugar-free peanut butter
1 Tbsp coconut oil

 

Yields: approx. 2 Β½ cups

Directions

Preheat oven to 250F.

Place all the ingredients into a large bowl and stir well. I like to mix by hand, even though it gets messy, to spread the coconut oil and peanut butter evenly.

Transfer the mixture to a parchment lined baking sheet and spread out evenly.

Bake for 15 min.

Pull the baking sheet out of the oven, and give the nut cereal a good stir. Spread it out again and return to the oven for another 15-20 min, until the nuts are golden.

Remove the cereal from the oven and allow to cool at room temperature, at least 20 min.

Store the peanut butter crunch cereal in an airtight container.

Enjoy with unsweetened milk alternative, on low carb yogurt or as a crunchy nutty garnish.
