Keto Antipasto Salad
A delicious and filling salad doesn’t get much easier than this keto antipasto salad. Easy to make, no cooking required, just tons of delicious flavour!
Ingredients
4 cups arugula
125 g (approx. 0.25 lbs) calabrese, sliced
1 red bell pepper, sliced
1 vine tomato, diced
1 cup marinated artichokes
1/2 cup black olives, pitted and sliced
2 Tbsp red onion, chopped
Dressing
2 Tbsp extra virgin olive oil
1 Tbsp white wine vinegar
1 tsp dry basil
1/2 tsp onion powder
Salt and pepper, to taste

In a small bowl, whisk together the dressing ingredients.
