Cranberry Almond Cookies

For National Keto Day, I am sharing this easy cookie recipe that you can enjoy year-round.

The cranberries and orange zest will throw you right back to Christmas-time. Since it is early in the New Year and Christmas lights are still up around town, there is no reason to stop enjoying those comforting Holiday flavours. πŸŽ…

Ingredients

1 cup almond flour
1/2 cup monkfruit sweetener
1/4 cup butter, melted
1/4 cup dry cranberries, unsweetened
1/4 cup almond slices or slivers
1 large egg
1 Tbsp orange zest
1 tsp baking powder

Directions

Preheat oven to 375F.

In a large bowl, combine the almond flour, monkfruit, cranberries, almonds, orange zest and baking powder.

Add the egg and melted butter, then mix the ingredients until well combined.

Spoon the batter onto a parchment-lined baking sheet, shaping each into a cookie.

Bake 12 min, until golden.

Once baked, remove the cookies from the oven and allow to cool at least 12 min. Enjoy!
