Coconut Funfetti (Keto)

After being hit by snow last week, spring seems to finally be settling in, and that puts me in a “sunshine, lollipops and rainbows, everything that’s wonderful” kind of mood!

🌈 What better time to prepare a batch a sugar-free coconut funfetti?! 🌈

Ingredients

2 cups unsweetened shredded coconut
6 Tbsp water
Food colouring drops, various colours

Directions

For this sugar-free coconut funfetti, I recommend making the full range of rainbow colours: yellow, orange, red/pink, purple, blue and green.

For each colour, combine 1/3 cup of the shredded coconut and 1 Tbsp water in a small bowl.

Gradually add 3 to 5 drops of food colouring in desired colour or combination of colours.

Stir well and adjust colour as needed. Lighter colours, such as yellow will need more drops, whereas darker colours need less.

Spread out on a wax lined sheet pan or board, then repeat for each colours.

Allow the coloured coconut to dry overnight.

Once fully dry, mix the colours together and store in the pantry in an airtight container.
