Cauliflower Curry Soup (Keto)

The weather has gotten cool and wet, so there is nothing like a nice warm bowl of soup to lift the spirits. Comfort in a bowl!

This cauliflower curry soup is soothing and perfectly spiced.

Ingredients

1 head of cauliflower, cut into florets
3 cups beef bone broth (store-bought or see our Beef Bone Broth recipe)
2 Tbsp butter
2 Tbsp 35% cream
1 Tbsp curry powder
1 tsp salt
1/2 tsp pepper
Pinch of cayenne pepper, to taste

Directions

In a large pot, melt the butter over high heat. Add the cauliflower florets and sautee 5 min, stirring regularly.

Add the beef bone broth (optionally, see our Beef Bone Broth recipe) and seasoning, stir and bring to a simmer. Leave the soup to simmer for 5 min, stirring occasionally.

Remove from the heat and transfer the soup to a blender. You can also leave it in the pot and use an immersion blender.

Blend the soup to a silky texture, then mix in the cream. Taste and adjust seasoning to taste.

Enjoy as an entrée or a light meal.
