Caprese Salad (Keto)
A good caprese salad is all about fresh ingredients.
Look for some sunkissed tomatoes, fresh mozzarella and some bright basil, and you have an amazing meal salad or side. No cooking required!
Ingredients
2 small balls of fresh mozzarella, sliced
1 vine tomato, sliced
1 Tbsp extra virgin olive oil
Handful of basil leaves
Kosher salt and freshly ground pepper, for garnish

Directions
On a plate, make a line of alternating mozzarella, basil and tomato. Drizzle with olive oil., then garnish with a pinch of kosher salt and some freshly ground pepper.
To make it into a more filling meal salad, I like to serve it over a bed of arugula.
