Caprese Mascarpone Salad (Keto)

A good caprese salad is all about fresh ingredients, but you can definitely play around with the classic options. This version is served on a bed of peppery arugula and has creamy mascarpone instead of fresh mozzarella.

Ingredients

2 cups arugula
1 vine tomato, sliced
1/4 cup mascarpone
1/4 cup marinated caprese peppers
1 Tbsp extra virgin olive oil
Kosher salt and freshly ground pepper, for garnish

Directions

On each plate, lay out fresh arugula, then the tomato slices and small dollops of mascarpone.
