Sage-Infused Salmon

This recipe is easy and packed with terrific healthy fats. This sage-infused salmon is a great way to use up the fresh sage that takes over a good part of my herb garden every summer.

Ingredients

12 oz (0.75 kg) salmon, cut into 6 individual fillets
3 Tbsp extra virgin olive oil, divided
3 fresh sage sprigs
3 garlic cloves, minced
Salt and pepper, to taste
Pinch of kosher salt

Directions

Preheat oven to 375F.

Mince 2 sprigs of fresh sage, then mix in a small bowl with the garlic, 1 Tbsp of extra virgin olive oil, and salt and pepper, to taste. Set aside.

Pat the salmon fillets dry with a paper towel to remove moisture. Set aside.

Heat the remaining 2 Tbsp of olive oil and last sage sprig in a large oven safe skillet over medium-high heat, and add a generous pinch of kosher salt.

Place the salmon fillets in the skillet, skindown over the salt, and allow to sear 5 min.

Spread the sage and garlic mixture over the salmon, then transfer the skillet to the oven.

Bake for 8-10 min.

Optionally, you can broil the salmon for the last 1-2 min in the oven, keeping an eye that they do not burn.

Remove from the skillet from the oven and serve the sage-infused salmon with the side of your choice, such as a cauliflower rice, roasted string beans, fresh salad, etc.
