Keto Spinach Egg Noodles

Ingredients

2 oz cream cheese
1/2 cup spinach
1/4 cup almond flour
2 large eggs
2 Tbsp butter
1 tsp salt
1 tsp garlic powder
2-3 fresh basil leaves

Directions

Preheat oven to 350F and line a baking sheet with parchment.

In a small bowl, soften cream cheese and butter by microwaving 20 sec.

Transfer to a blender, adding all the remaining ingredients. Alternatively, you can use a bowl with an immersion blender.

Pour the egg noodle mixture into the parchment lined sheet and spread it out thin.

Bake for 8 min, then allow to cool 2 min.

Transfer the baked egg mixture to a cutting board and slice into long noodles.

Enjoy the noodles with a low carb spaghetti sauce or some olive oil and parmesan, etc.

These work particularly well with a beef stroganoff. πŸ‘Œ
