Keto Maple Nut Cereal

Kickoff your day with this yummy crunchy maple nut cereal!

It tastes delish with a splash of unsweetened almond or macadamia milk, or thrown onto some keto-friendly yogurt.

Ingredients

3/4 cup Brasil nuts, roughly chopped or halved
3/4 cup pecans
1/4 cup pumpkin seeds
1/4 cup unsweetened coconut, shredded or flakes
2 Tbsp sunflower seeds
1 Tbsp flax seeds
2 Tbsp water
1 Tbsp keto maple syrup
1 tsp stevia
1/2 tsp vanilla extract

Directions

Preheat oven to 250F.

In a medium bowl, toss together the Brasil nuts, pecans, coconut and seeds.

In a small bowl, whisk the water, maple syrup, stevia and vanilla extract. Drizzle mixture over the seeds and nuts, and toss well.

Empty the nut and seed mix onto a parchment lined baking sheet. Spread it out on the sheet and bake for 10 min.

Pull the baking sheet out of the oven, and give the nut cereal a good stir. Spread it out again and return to the oven for another 10 min.

Turn off the oven and leave the nut cereal mix in the oven another 5-10 min to crisp up and dry completely.

Store the maple nut cereal in an airtight container.

Enjoy with unsweetened milk alternative, on low carb yogurt or as a crunchy nutty garnish.
