Keto Kielbasa Omelette
Being from an Eastern European family, any excuse is good to enjoy some Kielbasa.
So the other morning, when my son asked for an omelette with the “special sausage” in it, I was more than happy to oblige! This recipe was his brainchild. 🙂
Ingredients
6 large eggs
1 cup Kielbasa (Polish sausage), diced
1 cup green bell pepper, diced
2 Tbsp 35% cream
1 Tbsp butter
1 tsp caraway seeds
1 tsp Hungarian paprika
Salt and pepper, to taste

Directions
Preheat oven to 350F.
In a large ovensafe pan or skillet, melt the butter over medium heat.
Add the Kielbasa and bell pepper, and sautee about 3-5 min.
In a large bowl, whisk together the eggs, cream, caraway seeds and paprika, and season to taste with salt and pepper.
Pour the egg mixture into the skillet, give it a gentle stir and let it cook until the omelette begins to bubble, about 3-5 min.
Transfer the pan or skillet to the oven and bake 20-25 min, until the top is golden.
