Keto Haupia (Hawaiian Coconut Pudding)
Inspired by haupia, Hawaiian coconut pudding, this little dessert is zesty and oh so refreshing! It will make your mouth feel like itโs on vacation, even in these pandemic times.๐
Ingredients
3/4 cup coconut milk
1/4 cup water
1/2 lime, juice and zest
1/2 pkg powdered gelation
1 Tbsp stevia
Optional, for garnish: lime and lemon zest, slices of citrus fruit

Directions
In a small saucepan, heat the coconut milk, water and stevia over medium-high heat.
Add the lime juice and zest, and bring to a low simmer.
Remove from heat, add the gelatin, and stir constantly for 2 min, until well combined.
Pour the haupia mixture into silicone molds or ramekins, and refrigerate until set or overnight.
Unmold to serve and, optionally, garnish with a little zest and/or a slice of citrus fruit.
