Keto Haupia (Hawaiian Coconut Pudding)

Inspired by haupia, Hawaiian coconut pudding, this little dessert is zesty and oh so refreshing! It will make your mouth feel like itโ€™s on vacation, even in these pandemic times.๐Ÿ‹

Ingredients

3/4 cup coconut milk
1/4 cup water
1/2 lime, juice and zest
1/2 pkg powdered gelation
1 Tbsp stevia
Optional, for garnish: lime and lemon zest, slices of citrus fruit

Directions

In a small saucepan, heat the coconut milk, water and stevia over medium-high heat.

Add the lime juice and zest, and bring to a low simmer.

Remove from heat, add the gelatin, and stir constantly for 2 min, until well combined.

Pour the haupia mixture into silicone molds or ramekins, and refrigerate until set or overnight.

Unmold to serve and, optionally, garnish with a little zest and/or a slice of citrus fruit.
