Keto Butterbeer

May 2 commemorates The Battle of Hogwarts, making the date widely recognized as International Harry Potter Day.

Of course, as a Potterhead (Hufflepuff represent!), I just had to keto-fy the series most famous beverage, butterbeer. All the flavour and magic, none of the sugar!

Ingredients

Sparkling water
2 Tbsp sugar-free caramel or butterscotch sauce
(or 2 tsp sugar-free caramel or butterscotch syrup)
1/2 tsp vanilla extract

Whipped cream
1/4 cup 35% cream (heavy cream)
1 tsp stevia
1 tsp sugar-free caramel or butterscotch sauce
(or 1/2 tsp equivalent syrup)

Directions

In each serving glass, pour the vanilla extract and 1 Tbsp sugar-free caramel or butterscotch sauce or 1 tsp of syrup. You can use a store bought sauce or syrup, like Skinny Syrup.

Add a splash of the sparkling water and stir well. Then pour more sparkling water, stopping an inch or so from the top of glass, to leave room for the whipped cream.

For whipped cream, whisk together the heavy cream, stevia, and caramel or butterscotch sauce.

Use a few spoonfuls of the whipped cream to top off each glass, then drizzle with caramel or butterscotch sauce.
