Express Sugar Shack-Style Eggs
These express eggs are perfect when you want that sugar shack flavour without the guilt or the fuss. This recipe is just so quick and easy that I make it all the time!
Perfect for brunch, a light lunch or, dare I say, breakfast for supper.
Ingredients
3 large eggs
2 Tbsp heavy cream (35%)
2 Tbsp butter
1 Tbsp sugar-free maple syrup
Pinch of kosher salt

Directions
Crack the eggs into a small mason jar, add the heavy cream and a pinch of salt.
Close the mason jar and shake well.
In a small pan, melt the butter over medium heat.
Pour the eggs into the pan and allow to cook about 3-4 minutes.
When the edges are cooked and the center is bubbling, flip and let cook through, another 3-4 minutes.
Transfer the eggs to a plate and serve topped with the sugar-free maple syrup.
Optionally, add some fresh berries, such as strawberries or red currants.
