Earl Grey Scones

If you like to sip your tea with your pinky up, these scones are for you! They have are soft, buttery and infused with a mild Earl Grey flavour. ☕

Ingredients

2 cups almond flour
1/4 cup butter, melted
1 large egg
1 tea bag Earl Grey
2 Tbsp 35% cream
2 Tbsp stevia
2 tsp baking powder
1/2 tsp vanilla extract

Directions

Preheat oven to 325F.

Open the Earl Grey tea bag and empty the tea contents into a large bowl.

Add the almond flour, stevia and baking powder, and mix.

Pour the melted butter, cream and vanilla extract over the mixture, then add the egg, and combine. If you are using unsalted butter, add a pinch of salt.

Shape the dough into a large ball using your hands and transfer it to a parchment lined baking sheet. Flatten the ball by pressing down the dough slightly, spreading it out into the shape of a large circle.

Using a knife, cut the circle of dough across 4 times, making 8 scones. Gently space them out on the baking sheet to avoid them sticking together in the oven.

Bake the scones for 20-25 min, until the edges are golden.

Store the scones in the fridge or freeze them.
