Crunchy Peanut Butter Cookies (Keto)

There is something so comforting about a good old peanut butter cookie. It was the first thing I baked as a kid and loved it so much that I thought I was ready to make meringue… I was not! 😂

These crunchy peanut butter cookies are sugar-free, grain-free and ALL peanut butter flavour! 🥜

Ingredients

1/2 cup almond flour
1/2 cup all-natural crunchy peanut butter
1/3 cup monkfruit sweetener
1/4 cup butter, melted
1 large egg
1 tsp baking powder
1/2 tsp vanilla extract
Pinch of salt

Directions

Preheat oven to 350F.

In a medium bowl, mix together all the ingredients.

Note: For the peanut butter, I love to use the crunchy kind, but the smooth would work just as well. If you only have smooth peanut butter, you can also add some chopped peanuts.

Spoon out the mixture onto a parchment lined baking sheet, putting about 2 Tbsp of batter and leaving at least 1 inch between each cookie.

Bake for 12-15 min.

Once baked, remove the cookies from the oven and allow to cool at least 15 min.

The cookies will crisp up more once they have cooled completely or if refrigerated.
