Coconut Macaroons

The delightful chewiness of these coconut macaroons is irresistibly perfect! With a gentle sweetness and rich coconut favour, this is a recipe that you will want to make again and again.

Ingredients

1 ½ cups shredded unsweeteened coconut
1/2 cup unsweetened condensed milk (see our Condensed Milk recipe)
1/4 cup almond flour
1/2 tsp vanilla extract
Pinch of salt

Directions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, combine all the ingredients and mix well, until fully combined.

Using a cookie scoop or a spoon, drop portions of the mixture onto the prepared baking sheet. Space them out evenly, shaping each macaroon into a small mound.

Place the baking sheet in the preheated oven and let the macaroons bake for 18-20 min, until the tops turn a golden brown, indicating they are perfectly toasted.

Once baked, remove the baking sheet from the oven and let cool 10 min, then enjoy!

To stop them, transfer the macaroons to an airtight container and store them in the refrigerator.
