Chicken Fajitas (Keto)
The seasoning on these chicken fajitas is spot on, and the bell peppers bring a natural sweetness that works perfectly with it. Whip out those low carb tortillas and wraps, and get ready to indulge!
Ingredients
4 chicken breasts, sliced thin
1 small onion, sliced
2 bell peppers, sliced
2 Tbsp avocado oil
Marinade
1 lime, juiced and zested
1 Tbsp avocado oil
2 tsp chili powder
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp coriander powder
Salt and pepper, to taste
Optional, for serving: low carb tortillas or wraps, lettuce wraps, cauliflower rice, or side of choice
Optional, for garnish: grated cheddar cheese, sour cream and other toppings of choice

Directions
In an airtight container, whisk together the ingredients for the marinade. Add the chicken and mix to coat evenly, then refrigerate for 1 hour.
Once the chicken has marinaded, heat the avocado oil over medium-high heat in an oven-safe skillet.
Add the chicken to the skillet. Cook about 8 min, stirring occasionally, until browned.
Add the onion and bell peppers, and sautee another 5-7 min.
Transfer the skillet to the oven on broil for about 5 min, keeping an eye that you get a slight char, without burning.
Serve the chicken fajitas in ow carb tortillas or wraps, over cauliflower rice or lettuce wraps.
Garnish to taste. These are delicious with some grated cheddar and a dollop of sour cream.
