Chewy Coconut Cookies (Keto)

These deliciously chewy coconut cookies are grain-free, nut-free, sugar-free AND vegan! These arepacked with coconut flavour and practically for everyone ! πŸ˜‚

Ingredients

1 cup coconut flour
1 cup coconut milk
1/2 cup unsweetened shredded coconut
1/2 cup monkfruit sweetener
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp xanthan gum
Pinch of salt

Directions

Preheat oven to 350F.

In a medium bowl, mix together all the ingredients.

Roll the dough into approximately 2 Tbsp sized balls and place spaced out on a parchment lined baking sheet. Press down each ball slightly to prevent rolling.

Bake for 20 min.

Once baked, remove the cookies from the oven and allow to cool 10 min.
