Sugar-free Candied Nuts

Sugar-free candied nuts that are great as a topping and for snacking!

They are quick and easy to make, then just store in a airtight container for when needed.

Ingredients

1/2 cup Brazil nuts
1/2 cup macadamia nuts
1 tbsp stevia
1 Tbsp monkfruit sweetener
Pinch of cinnamon and nutmeg

 

Yields: 1 cup
Per serving: 2 net carbs per 1/3 cup*

Prep time: 2 min
Cook time: 18 min
Total time: 20 min

Directions

In a small saucepan over medium high heat, melt down the stevia and monkfruit sweetener in 3 Tbsp of water.

Add a pinch of cinnamon and nutmeg, then bring to a simmer.

Once the mixture is bubbling, add the nuts.

Note: This recipe can work for any type of nuts and remain sugar-free. However, the net carbs range widely from one variety ot another.

Stir constantly until the liquid simmers down and start sticking to the nuts.

Empty the nuts onto a greased pan or parchment. Space them out and allow to cool at least 15 min.

Store in a airtight container to use for snacking or as a garnish, when needed.
