Pink Mylk Chia Pudding (Keto)
In my April KETO4ALL! subscription box, there was a bag of this beautiful beetroot latte powder by Blume, and I knew that I just HAD to make all kinds of pretty pink things with it!
Aside from the recommended latte, I used it in this spiced beetroot chia pudding and it did not disappoint! It’s as lovely as it is yummy!
Ingredients
1 1/2 cups unsweetened almond milk
6 Tbsp chia seeds
2 tsp stevia
1 tsp Blume Beetroot Blend
Optional, for garnish: keto maple syrup, cocoa nibs, shredded unsweeteened coconut

Directions
In a mason jar, combine the almond milk, chia seeds, stevia and beetroot blend.
Mix well and refrigerate overnight.
Great as-is or with toppings of choice. I like to drizzle it with a little sugar-free maple syrup and cocoa nibs.
