Pumpkin Beef Stew (Keto)

My son came home from a school outing with a gorgeous pumpkin, so I have been putting it to good use in the kitchen.

With the fall season upon us and Halloween right around the corner, this pumpkin beef stew is sure to please! πŸŽƒ

Ingredients

1.6 lbs (or 0.75 kg) beef cubes
2.5 cups beef bone broth
2.5 cups water
2 cups pumpkin, diced
2 cups celeriac, diced
1/2 small onion, diced
3 garlic cloves, minced
2 bay leaves
2 Tbsp avocado oil
2 Tbsp tomate paste
1 Tbsp paprika
1 tsp dry thyme
Salt and pepper, to taste

Directions

In a large pot over medium-high heat, warm the avocado oil.

Add the onion, garlic and bay leaves to the pot, and sautee 2 min, stirring often.

Add the beef cubes and season generously with salt and pepper, to taste. Sautee until the beef cubes are browned on all sides, about 5 min, stirring occasionally.

Add the diced celeriac and pumpkin to the pot, and sautee another 3-5 min, stirring occasionally.

Add the tomato paste, paprika and thyme, and mix well.

Top off the beef cubes and other ingredients with the beef bone broth and water.

Bring the stew to a low simmer. Cover, reduce the heat to low, and allow to simmer for 1 hr 30 min, stirring occasionally.

Uncover the stew and let it simmer down another 15 min, to thicken it slightly.

Enjoy a bowl of pumpkin beef stew as-is or enjoy with a slice of low carb bread to soak up all the juices. πŸ˜‹
