Mustard Meatloaf (Keto)
This mustard meatloaf is a breeze to prepare and makes a great family meal! It is perfect served with some roasted veggies or a salad, and leftovers can even be used to make sandwiches.
Ingredients
1.5 lbs (0.7 kg) ground beef
1/2 small onion, minced
1/2 cup zucchini, grated and strained
1 large egg
2 garlic cloves, minced
2 Tbsp yellow mustard
1 Tbsp almond flour
1 Tbsp flaxmeal
1 tsp dry mustard
1 tsp dry oregano
1/2 tsp Worcestershire sauce
Salt and pepper, to taste

Directions
Preheat oven to 350F.
Place all the ingredients with the exception of the yellow mustard into a large bowl. Mix well by hand, careful not to overwork the meat. Season to taste with salt and pepper.
Transfer the meat mixture to a greased loaf pan and press down lightly to even the top.
Spread the yellow mustard over the ground beef, then bake 60 minutes.
Remove the meatloaf form the oven and allow it to rest 15 min.
Gently lift the meatloaf out of the loaf pan to a cuttign board and slice.
Serve with the side of your choice. Optionally, drizzle with a little yellow mustard.
