Mole Chicken Drumsticks (Keto)

This mole sauce takes quite a few ingredients, but it is sooooo good, you’ll want to drink it up! Toss some chicken drumsticks into it to simmer and you’ve got an unforgettable meal.

Ingredients

1.5 lbs (0.7 kg) chicken drumsticks
2 ½ cups chicken broth
1 cup water
2 chipotle peppers in adobo sauce
2 cascabel chilis, dry
1 small tomato, diced
1/2 small onion, diced
2 garlic cloves, minced
2 Tbsp pecans, chopped
2 Tbsp monkfruit sweetener
2 Tbsp sugar-free dark chocolate chips
1 Tbsp avocado oil
1 Tbsp butter
2 tsp smoked paprika
2 tsp chili powder
1/2 tsp ground cinnamon
1/2 tsp cumin seeds
1/2 tsp dry thyme
1/8 tsp ground clove
Salt and pepper, to taste

Directions

Preheat oven to 400F.

Place the dry cascabel chilis in a large skillet, cover with the chicken broth. Bring the broth to a low simmer over medium-high heat to rehydrate the chilis.

Add the chipotle peppers, tomato, onion, garlic cloves, pecans, cumin seeds and dry thyme. Reduce heat to medium and allow to simmer 10-15 min, until the onion and chilis are soft.

While the skillet ingredients simmer, toss the chicken drumsticks in avocado oil and season with salt and pepper, to taste.

Lay the drumsticks out on a parchment lined baking sheet, then bake 30-35 min, until golden brown.

Once the ingredients in the skillet have simmered, transfer them to a blender and pulse to a puree. Alternatively, you can transfer them to a high rimmed heatproof container and use an immersion blender.

Returned the pureed sauce to the skillet. Stir in the water, monkfruit, smoked paprika, chili powder, cinnamon and clove. Season with salt and pepper, to taste.

Reduce heat to medium-low, and allow to cook down for 10 min.

Stir in the butter and sugar-free chocolate, mixing constantly until they have melted and are blended into the sauce.

Once the chicken drumsticks are golden, remove from the oven and transfer them to the skillet. Stir until the chicken is well coated with the sauce, then let the drumsticks simmer in the mole about 5 min.
