Mediterranean Chicken Brochettes (Keto)
These Mediterranean chicken brochettes are so tasty, and even easier to make! Just marinate, then pop them in the oven. Yummers!
Ingredients
4 chicken breasts, diced
2 bell peppers, diced
1 small onion, diced
Marinade
3 garlics cloves, minced
2 Tbsp extra virgin olive oil
1 tsp dry oregano
1/2 tsp Fenugreek
1/4 tsp dry thyme
Salt and pepper, to taste

Directions
In a large bowl, whisk together the marinade ingredients. Add the chicken, toss until evenly coated, then cover and refrigerate 30 min.
If using wooden skewers, be sure to soak them in water, while the chicken marinates.
Before pulling the chicken out of the fridge, preheat oven to 400F.
Prepare the skewers by alternating between chicken, bell pepper and a little onion.
Place the chicken skewers on a baking drip pan or aluminium-lined baking sheet.
Bake 30 min, switching to broil for the last 2-3 min.
