Keto White Chocolate Macadamia Nut Cookies

White chocolate macadamia nut are one of my all time favourite cookies. This keto version is chewy, buttery and packed with yum!

Ingredients

1 ½ cups almond flour
1/3 cup erythritol
1/4 cup butter
1/4 cup macadamia nuts, coarsely chopped
1/4 cup sugar-free white chocolate chips
1 large egg
1/2 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp xantham gum

Directions

Preheat oven to 350F.

In a large bowl, prepare the cookie dough by whisking together the almond flour, erythritol, egg, vanilla extract, baking powder and xantham gum.

In a small bowl, melt the butter in the microwave about 20 sec, then stir.

Stir the melted butter into the cookie mixture, then mix in the macadamia nuts.

Shape the dough into a dozen small cookies on a parchment lined baking sheet, then bake for 10 to 12 min.

Remove the cookies from the oven and press the sugar-free white chocolate chips even between them. This will allow the white chocolate to melt slightly, without melting into the dough completely, as many brands do.

Return the cookies to the oven and bake for another 5-8 min.

Remove the cookies from the oven and allow them to cool at least 15 min before handling, so that they firm up slightly.

Store the white chocolate macadamia nut cookies in the fridge or freeze them.
