Keto Raspberry Goat Cheese Salad
Who doesn't enjoy a little taste of summer as the days get shorter and colder? π
This raspberry goat cheese salad almost makes me forget that the Holidays are just behind us and has me dreaming of summertime.
Ingredients
3 cups mixed greens
1/2 cup raspberries, fresh or frozen
1/4 cup pecans, chopped
1/4 cup goat cheese
3 Tbsp avocado oil
1 Tbsp red onion, minced
1 Tbsp keto maple syrup
1 Tbsp white wine vinegar
Pinch of salt and pepper
Hanful of fresh raspberries

Directions
To make the raspberry vinaigrette, blend together the raspberries, oil, maple syrup, vinegar, and a pinch of salt and pepper.
For the salad, toss together the mixed greens, pecans, red onion. Drizzle with vinaigrette and crumble goat cheese over the salad. Top with a fresh fresh raspberries.
Store any remaining vinaigrette in the fridge for future use.
