Keto Doro Wat (Ethiopian Chicken)
Doro wat brings me so much joy! ❤ This keto-fied version of the popular Ethiopian dish still packs a punch, being full of rich and complex flavours.
Ingredients
4 chicken breasts, diced
1 cup onion, chopped
1 cup water
1/4 cup butter
2 Tbsp avocado oil
2 Tbsp berbere spice
1 Tbsp garlic, minced
1 Tbsp fresh ginger, minced
1 black cardamom pod

Directions
In a covered microwave safe bowl, heat the chopped onion by 2 min increments, stirring each time, until soft. Should take 8-10 min total to soften it.
Transfer the onions to a blender (or use immersion blender), and blend with the water and avocado oil, until smooth.
In a large pot, melt the butter over medium high heat. Add the black cardamom pod, minced garlic and ginger. Cook about 2-3 min, stirring often.
Add the berbere spice. It can be bought or homemade (there are several recipes online). Heat spices about 30 sec.
Add about half of the onion puree and cook until it starts to bubble.
Pour the remaining onion puree into the pot and add the diced chicken.
Bring to a simmer, cover and reduce heat to medium low. Leave it to simmer until the chicken is cooked through, about 20 min.
Doro wat pairs well with keto naan or flatbread, and a light salad.
