Cloud eggs have been all the rage, so why not make a cloud omelette?

This recipe is quick and easy to whisk up and, like most egg recipes, can be enjoyed for pretty much any meal of the day.

Ingredients

6 egg whites
2 large eggs
1/2 cup mozzarella, grated
1/4 cup scallions, sliced
1 /2 tsp cream of tartar
Salt and pepper, to taste

Directions

Preheat oven to 350F.

In a medium bowl, whisk together the 2 eggs, mozzarella and scallions. Season to taste with salt and pepper, then set aside.

In a large bowl, using a handmixer, whisk the egg whites with cream of tartar into stiff peaks.

Gently fold the cheese mixture into the egg whites, making sure not to overwork it and keep it light and airy.

Transfer the cloud omelette mixture to a greased baking dish, and bake 25-30 min, until the top is golden.
