Egg, Ham and Cheese Salad (Keto)
Kinda of like a ham and cheese sandwich, but in a salad. Add some egg for extra protein and you have a light, but filling meal.
Ingredients
2 cups baby spinach
4 ham slices, diced
2 hard-boiled eggs, diced
1/2 cup cheddar cheese, grated
Dressing
2 Tbsp extra virgin olive oil
1 Tbsp mayonnaise
1 tsp white wine vinegar
Salt and pepper, to taste

Directions
In a small bowl, whisk together the dressing ingredients. Season with salt and pepper, to taste.
In a large bowl, combine together the spinach, ham, eggs and cheddar. Drizzle with the dressing, toss and serve.
