Easy Spring Salad (Keto)
As the warm weather rolls in, it’s hard to beat a nice salad for lunch. Fresh vegetables, a light dressing and a hard-boiled egg is all I need for a quick meal.
Ingredients
3 cups mixed greens
2 hard-boiled eggs
1/2 cup cucumber, sliced
1/4 cup red cabbage, shredded
Handful of microgreens
Dressing
1 Tbsp extra virgin olive oil
1 Tbsp mayonnaise
Salt and pepper, to taste

Directions
In a small bowl, whisk together the dressing ingredients.
In a large bowl, toss together the mixed greens, cucumber and red cabbage, then divide between 2 bowls.
Top each bowl with a handful of microgreens, a sliced hard-boiled egg, and dizzle with dressing.
