Chipotle Cocoa Ribs
Richly flavoured and fall-off-the-bone tender, these chipotle cocoa ribs are sure to be a hit! Showcasing the smoky heat of chipotle with the rich undertones of cocoa, it is a surprisingly delicious combination.

1 rack (6 oz) of pork ribs
1 Tbsp extra-virgin olive oil
2 tsp cocoa powder
2 tsp paprika
2 tsp salt
1 tsp chipotle chili powder
1 tsp chili powder
1 tsp garlic powder

Directions
Preheat your oven to 300°F (150°C).
In a small-sized mixing bowl, prepare the dry rub by combining the cocoa powder, paprika, salt, chipotle chili powder, chili powder and garlic powder. Mix well to ensure even distribution of spices.
Lightly drizzle the olive oil over the ribs, ensuring they're evenly coated. Generously apply the dry rub, massaging it into the meat on all sides.
Lay out a large sheet of aluminum foil. Place the seasoned ribs on top and wrap them securely, ensuring all edges are tightly sealed. Transfer the foil-wrapped ribs onto a baking sheet.
Place the baking sheet into the preheated oven and bake the ribs for 2 hrs.
After baking, carefully open the top of the aluminum foil to expose the ribs. Switch your oven to the broil setting and grill the top of the ribs for an additional 2-3 minutes.
Once done, remove the ribs from the oven and let them rest for about 5 min to lock in the juices. Using a sharp knife, separate the ribs.
Serve hot alongside your favorite side dish, and enjoy!
